Buckwheat Noodles (Soba)

There are so many soba restaurants serving great buckwheat noodle dishes in Chichibu that it is no exaggeration to say Chichibu is synonymous with soba. There are nearly 60 soba restaurants in Chichibu's small valley, including a number of renowned restaurants. If it is your first time in Chichibu, why not try a nearby soba restaurant for lunch? Chichibu soba noodles are not only freshly cooked, but are freshly made from freshly ground flour, and every soba restaurant has its time-honored, secret-recipe dipping sauce to bring out the delicious flavor of soba.

Traditional Snacks (Kojuhan)

Kojuhan are traditional home-made snacks passed down from olden times in the Chichibu region.

The snacks are local dishes made at home mainly from local grains and produce according to unique family recipes.

Waraji Katsudon

Be sure to try waraji katsudon when you visit Chichibu. This dish, consisting of two pieces of deep-fried pork cutlet flavored with a distinctive sauce, is renowned for its delicious taste.

Miso-glazed Potatoes

A local dish of Chichibu. Deep-fried potatoes are flavored with a miso-based sauce. This dish has also achieved great popularity, as it makes a simple little snack.

Miso-pickled Pork

Miso-pickled pork is a Chichibu secret - a technique developed by Chichibu hunters to pickle trapped wild boar in miso as a means of preserving the meat. These techniques are still applied today.

Nihonshu

Chichibu is home to two sake breweries utilizing water from the Chichibu mountain and Arakawa river systems. The nihonshu brewed amidst the clean air and extreme temperature range of Chichibu is also well received as a souvenir of alcohol from the Chichibu region.

Wine

Chichibu is dotted with many vineyards. Lavish use of these grapes results in a rich, subtle wine.

Whisky

Chichibu whisky has recently become popular. Of the whisky available, Ichiro’s Malt, at 56% alcohol, was judged the best in Japan, and is loved by whiskey connoisseurs around the world.

Beer
